    Good fats?

Twice today, I've had people argue with me about "necessary" oils and the "good fats". I'm at a loss how to respond to them, they both have health issues, but are obviously listening to the wrong doctors. Any suggestions?

Sorry to keep asking questions, Sean, but would that mean that bean pasta and corn tortillas would fit the starch-smarter program? I'm still struggling to get my blood sugar down, so do I need to stick with the starch smartest at the time being?  This next question is addressed to Deborah, since I have celiac disease. I'm having trouble finding millet, amaranth, and buckwheat that are "certified" gluten free. In fact, they do not even have gluten free on the package, although those grains are naturally gluten free. I'm assuming there's cross contamination issues is why? Any suggestions? I seem to be limited to only rice, and with the arsenic issues, that, too can be a problem! Quinoa doesn't fit the starch-smartest level Due to being about 14% fat. Thanks for all your help!

Hi Deborah, Dr. Carney's starch smartest info states to use no flours of any kind. Does that include gluten free bean pasta, or polenta corn grits? Trying my best to stay under the 10% fat limit, and quinoa is higher than that, and I believe amaranth is also. I'm finding a lot of info on www.wholegrainscouncil.org have you checked that out?

Haha! You are welcome Ken! Let me clarify that I was diagnosed pre diabetic years ago and I do monitor my glucose. They have been recently changing negatively and I realized I had started eating items with higher oil levels. My A1C was recently 5.7, down from over 6 in the past. I try to pay attention to everything now as I don't want it to go into diabetes.

It has 6 grams of protein and 5 grams of fiber. I mixed it with frozen mixed berries and it was quite tasty and filling! BTW, I, too am celiac. Thanks so much for the info!

Dr. Carney, just wanted to say that Healthfest was fantastic! Thank you for being there! I hate to keep adding questions, but I've been sticking totally to your plan since our discussion started, but am experiencing some problems making it thru the afternoons. If I get delayed and can't eat by 6, I become very very shaky and literally feel like I'm starving. I may have mentioned prior that I've been pre-diabetic for years and my doctor says I having impaired fasting glucose. If I try to go 12 or 13 hours between dinner and breakfast, my fasting count goes up to sometimes even 125! Is there some way to keep this from happening?
