Ultra-processed foods and allergic symptoms among children and adults in the United States: A population-based analysis of NHANES 2005-2006

Diets centered around the intake of ultra-processed foods may promote the development of asthma and eczema in children and girls respectively.

​This study seeks to clarify the nexus between elevated consumption of ultra-processed foods and the prevalence of allergic symptoms in children and adults. Researchers used a combination of dietary questionnaires and hospital records to determine the ultra-processed food intake levels and incidence of allergic conditions in a study group made up of close to 8,000 children and adults in the United States. 

Researchers found out that the likelihood of asthma and eczema occurring in children and girls respectively skyrocketed with increase in the frequency of ingestion of ultra-processed food consumed. This 2023 study documented that high dietary intake of ultra-processed foods may facilitate the development of asthma and eczema in children.
