World Health Organization: fruits and vegetable consumption.

Ingesting large amounts of fruits and vegetables may reduce the risk of developing cancer.

This research work was carried out to evaluate the relationship between the consumption of fruits and vegetables and cancer incidence. The International Agency for Research on Cancer (IARC) – the cancer research agency of the World Health Organization - assembled a team of experts to review several published literatures on the cancer preventive activity of fruits and vegetables. These experts observed a lower incidence of cancer in populations that consumed large amounts of fruits and vegetables. The findings of this review support the growing body of evidence that high intake of fruits and vegetables may confer significant protection against the development of cancer.
