Red meat consumption and cardiovascular target organ damage (from the Strong Heart Study)

High dietary ingestion of red and processed meats may be injurious to cardiovascular health, particularly in individuals with hypertension.

This study assessed the impact of consuming a meaty diet on cardiovascular health. Researchers studied the dietary choices and echocardiogram and carotid ultrasound results of 535 hypertensive patients and 555 individuals without hypertension. 

Researchers detected the presence of atherosclerotic plaques in the carotid artery and significant damages to the heart of hypertensive patients with high intake of red and processed meats. The take-away from this study is that regular consumption of red and processed meats may have a detrimental effect on cardiovascular health, especially in individuals with hypertension.
