This is a device which patients of Linda Carney's who have adopted the Starch-Smart® plant-based lifestyle have highly recommended. The Carney's added this to their shopping list and could not have been happier with a cooking device. This is by far their defacto favorite tool now. It is a fast and safe way to cook many foods that otherwise have a long cooking time. Soaked beans can cook in from fifteen to thirty minutes, and there is no worrying about whether the pressure cooker will run out of water! The Instant-Pot can also cook starchy root vegetables in a very short time.
There are a LOT of electric pressure cookers coming out on the market. The main reason we are gravitating to this one is because the bowl is stainless steel. We are very interested to know if any other makes and models are also using stainless steel bowls. Our preference is to avoid teflon and aluminum.
