I run a whole plant-based cooking club that teaches people how to "love food that loves them back"--how to eat more vegetables, fruit, whole grains and beans, with no added refined oils or animal products. It has been an incredible journey, sharing what I have been learning and how it is changing my own health for the better. But I want to be able to reach more people and be a more effective health educator. So today, I have begun the plant nutrition course offered by T. Colin Campbell and his team. It has been an awesome day studying the first module of this course and I look forward to how this is going to expand my opportunities to help more people discover the benefits of a whole plant based lifestyle.
