I saw on an infographic that the best way to derive the most antioxidants from the sweet potato is to boil it. Any thoughts on this?

I also read this article by Dr. Greger--he seems to agree with the infographic poster. He also maintained that boiling them gives less of a blood sugar spike. Of course, he says they're so high in antioxidants, the best method is just to eat them! LOL! Would you suggest boiling, though, for someone who wants to improve their blood sugar?

Sounds like great advice from Dr. Greger. :-)  Cook them and enjoy them and don't worry too much if the way you are preparing them is the 'best' way. As long as you are not eating them with added oils you should see great results. And, delicious results to boot.
