    Great testimonial! I would like to understand better, however, why a breakfast of beans, greens, squash, and yams would be considered a superior breakfast to a bowl of thick rolled oats or steel cut oats, with assorted fresh fruit, and some seeds/walnuts? I recognize that by not having greens for breakfast one is not getting that boost to artery relaxation, but why are the beans, squash and yams preferable to oats and fruit? And I ask this for a person who is basically healthy; not dealing with excess weight. I understand that rolled oats are not a whole grain like steel cut oats, and so they are absorbed faster, which for some with insulin resistance or excess weight may be an issue. But what are the other great reasons to supplant the breakfast bowl of oats and fruit, with Dr. Carney's suggested breakfast dish? Looking forward to the answer...
