Traveling while eating a whole-food, plant-based diet can be challenging at first, but once we learn a few basic principles, it becomes much easier. There's also good news for truck drivers who face serious challenges when it comes to eating healthfully on the road. Read about a kind, but macho trucker who has figured out how to eat a whole-food, plant-based diet while driving his big rig and who freely shares his knowledge. I also have a system for preparing food in hotels which involves always checking into a room with a small refrigerator and a microwave and packing an Instant-Pot into the suitcase. Upon landing, you can find a grocery store and stock up on root vegetables, lentils, some rice, etc. and lots of fresh salad and other produce. Then cook up a storm right in your room in the evenings and in the mornings.

You can put a lentil or other bean soup or stew on to cook just before bed. It will cook while you are sleeping. Upon waking, put it all into containers in the little fridge. Then put on some sweet potatoes, chayotes, parsnips, carrots, potatoes, etc. and steam them for 10 to 15 minutes while you take a shower. 

It is easy to eat like a king this way. It may be simple food but it can also be very tasty and will certainly be very filling. The only preparatory work before the trip is to put together little flavor packs in ziplock bags with seasonings. Now that you know how, have a nice trip!
