No need to run out to the store for a pint of ice cream; just gather your few ingredients and whip this up in your blender. This recipe will work best in a powerful blender like a Vitamix because it can make the texture really creamy. Ingredients
- 3 large frozen bananas cut into chunks
- 1 tsp vanilla extract
- 2 tbsp unsweetened organic soy or other non-dairy milk
- 1-2 Mejdool dates
- 1-2 Tbsp organic baking cocoa (this is unsweetened)
Instructions
- In a blender (a Vitamix type blender is best for this recipe as it will make the ice cream very creamy), add about half of the bananas and the other ingredients. You might want to just add 1 date and 1 tbsp of baking cocoa to start. Begin to blend.
- Once it starts to cream up, add the rest of the bananas and continue to blend.
- Do a taste test to determine if you want to add another date or more cocoa depending on how sweet or chocolatey you prefer it to be. If you are having trouble blending, you may want to add a bit more non-dairy milk.
- Serve it up right away or if you would like it a bit more frozen, put in the freezer for a while.
